JOB DESCRIPTION

 

JOB TITLE:  Head Cook

 

REPORTS TO:  Nutrition Services Director

 

UNIT CLASSIFICATION:  PSE Food Service

                                                                                                                                                       

 

PRIMARY PURPOSE:

The job of the Head Cook is for the purpose of overseeing and participating in the cooking and preparation of food; ordering and verifying quantities and specifications of orders; maintaining facilities in a sanitary condition; reporting daily meal counts and guiding assigned food service personnel in their job functions.

 

ESSENTIAL FUNCTIONS*:

  • Assists in the cooking, preparing, and serving of food for the proper nutritional needs of children within the requirements of the National School Lunch Program.
  • Assists in the daily clean up of the kitchen and service areas for the purpose of maintaining sanitary conditions.
  • Directs other on-site food service personnel for the purpose of guiding them in performing their functions in a safe and efficient manner.
  • Estimates food preparation amounts and adjusts recipes for the purpose of meeting projected meal requirements and minimizing waste.
  • Assists in the responsibility of ensuring that during meal service periods the supply of food offered is replenished regularly.
  • Maintains inventory of dry storage, refrigerated and frozen food, condiments, etc. for the purpose of ensuring availability of items as specified on the menu.
  • Prepares reports relating to meals served, supply inventory, etc for the purpose of documenting activities within the kitchen.
  • Responsible for preparing and verifying an order list of items specified on the menu.
  • Maintains daily production records to ensure that all meals are meeting daily nutrition

            minimums in coordination with the HHFKA (Healthy Hunger Free Kids Act) of 2010.

  • Reports equipment malfunctions for the purpose of maintaining equipment in safe working order.
  • Assumes responsibility for the proper storage and disposal of unused food.
  • Schedules and performs regular cleaning of refrigerators and storerooms.
  • Performs other related duties as assigned for the purpose of ensuring an efficient and effective work environment.

 

 

 

 

WORKING CONDITIONS:

The usual and customary methods of performing the job’s functions require the following physical demands:  significant lifting, carrying, pushing, and/or pulling; some climbing and balancing; frequent stooping, kneeling, crouching, and/or crawling; and significant fine finger dexterity.  Generally, the job requires 5% sitting, 15% walking, and 80% standing.  The job is performed under some temperature extremes and hazardous conditions.

 

QUALIFICATIONS:

  • Washington State Food & Beverage Service Workers Permit.
  • High School Diploma or equivalent.
  • Job-related experience with increasing levels of responsibility is required.
  • Prior experience in the preparation and serving of food in a school food service facility or comparable experience preferred.
  • ASFSA & WSFSA certification required after the hire date of January 1, 2003. Must maintain certification.

 

SKILLS, KNOWLEDGE, AND ABILITIES:

  • Ability to work as part of a team with students and adults in a positive and cooperative manner.
  • Adhere to safety and sanitation practices.
  • Ability to perform basic math.
  • Knowledge of industrial-size kitchen utensils and equipment.
  • Ability to prepare and maintain accurate records and use applicable software applications.
  • Ability to communicate with students, staff, parents, and community in a pleasant and helpful manner.
  • Ability to establish and maintain effective working relationships.
  • Ability to work independently with minimum supervision.

 

Licenses/Special Requirements

Valid Washington State Drivers' license or photo identification.

Social Security Card.

WSP/FBI fingerprint/background clearance.
